This chicken and rice dish has been a favourite chicken recipe baked with onions, bell peppers, and water chestnuts, then added to prepared yellow rice that makes this dish rich in flavour, one that you will never forget.
Preheat oven to 350 degrees. In a casserole toss onions, green bell peppers, and water chestnuts with olive oil to coat. Cover the chicken with salt, pepper, seasoning salt, then place on top of vegetables in the oven. Cover and cook chicken for 1 hour and 15 minutes.
While the chicken is cooking, prepare the yellow rice according to package directions or make your own yellow rice by boiling plain rice in water with some saffron threads or yellow food colouring. After chicken is cool, remove skin, de-bone and shred meat. Add shredded chicken and cooked rice into the oven along with the vegetables and continue cooking an additional 15 minutes before serving it hot.
