There is nothing that can beat a piping hot slice of fish pie. This fish pie recipe contains white fish, smoked fish, salmon and prawns, which mix to give a definite flavor to the fish pie. The creamy mashed potatoes in the pie make it a mouthwatering snack. It is best eaten hot with steamed broccoli and cauliflower. You can also serve it with a green salad.
In a frying pan, put half the onion slices, 4 peppercorns, a bay leaf and a parsley sprig. Put the same ingredients into a saucepan also. Put ling, milk and smoked fish into the frying pan. To the saucepan, add the salmon and slices of lemon and put enough water into the saucepan to cover the salmon slightly.
Now, boil both the frying pan and the saucepan. Remove from the heat, cover it and keep aside for 10 minutes. Meantime, boil the quartered pieces of potatoes in boiling water for 20-25 minutes. Preheat the oven at 190 C. Now, strain the milk from the smoked fish into a jug. You should have about 2 cups of milk, if you do not have 2 cups add some extra milk.
Now, remove the salmon from the saucepan. Skin all the fish and remove the bones. Flake the flesh of all the fish with a fork and keep aside. In a saucepan, melt a little butter, stir in the flour and let it cook for 1 minute over low heat. To this, add the strained milk and stir it in. Keep stirring until it boils. Reduce the heat and let it simmer for 2 minutes. Remove from the heat and add the black pepper.
Take the flaked fish and mix with the prawns. Add parsley and lemon juice and mix it properly. Put it into a casserole and keep aside. Drain the boiled potatoes and mash them. To this, add the remaining butter and a little milk to make it creamy. Blend the butter and milk into the mashed potatoes until they are smooth and fairly thick.
At this point, add the salt and pepper. Now, spread the mashed potatoes evenly over the fish mixture. Brush the top of the fish pie with the beaten egg. Bake the fish pie for 35 minutes in the preheated oven.
