Kesari bath is a traditional dessert of South India, especially Karnataka. It is prepared with sooji and lots of ghee and is a perfect sweet for any occasion. It is an easy recipe and good for beginners.
Cooking time: 15 min
Heat 2 tsp ghee in a non stick pan. Fry sooji till it gets a light brown color or a good smell prevails in the air. Take it in a bowl. Mix sugar to the hot rawa and keep aside.
In the same pan heat the remaining ghee. Fry cloves, chopped cashew nuts and raisins. Pour the measured amount of water along with the food color and cardamom powder. Bring it to a boil.
Add the sooji-sugar mixture gradually to it. Keep stirring till it is mixed well, sooji is cooked and ghee oozes out. Kesari bath is now ready. Serve hot in small bowls.
Variation: Use freshly extracted pineapple juice instead of water for a different flavor.
