Hummus or chick pea sauce is a famous Arabic recipe made with creamy puree of chickpeas and sesame paste and seasoned with lemon juice and garlic. In fact hummus is the Arabic word for chickpea or garbanzo beans.
Hummus is one of the oldest foods dating back to ancient Egypt. It’s extremely easy to prepare and can be made every day to serve with Pita bread or chapatti. Hummus is very healthy dish and can be prepared with no time and given to children and the patients.
Cooking time: 10 minutes.
Soak the chick peas and green moong together, preferably overnight. Boil them in a sauce pan by adding 2 cups of water and salt. Cook for 15 minutes till they get soft and tender. One can use the pressure cooker for easy boiling of these peas. Now drain water and cool it for a while.
Take a frying pan. Heat olive oil in the pan at medium flame. Add sesame seed and chopped onions. Sesame seeds add the crispiness while eating the hummus. Alternately we can use peanuts or any other nuts. Sauté it for 2 minutes. Now add the black pepper powder and salt. Stir for a minute. Now add lemon juice which makes the hummus quite tangy and tasteful. One can make it optional too. Cook it again. Turn off the flame and keep the mixture side for cooling at about 8 minutes.
When the mixture is cooled enough. Combine remaining ingredients in a blender or food processor. Add 1/4 cup water into the blender. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Be sure about the smoothness that is what required in this recipe of hummus. A soft, greasy, smooth paste of hummus is now prepared.
Place in serving bowl, and create a shallow place in the center of the hummus. We can add melted butter on the top for a nice aroma and taste. We can store it in the refrigerator of couple of days. Garnish with parsley (optional). Serve with crackers, raw dip vegetables such as carrots or celery, or with pita bread.
